Gathering herbs has been a Greek habit since ancient times, given their use as a raw material in medicine, perfumery, fabric painting and gastronomy. From the Centaur Chiron of Greek Mythology to the father of medicine, Hippocrates, and then to Dioskourides, who set the foundations of botanology, the already known use of Greek herbs continued extensively during Christianity and developed more in the Middle Ages.

thyme is the herb of some members of the genus Thymus of aromatic perennial evergreen herbs in the mint family Lamiaceae. It has medical and ornamental uses. The ancient Greeks used it in their baths and burnt it as incense in their temples, believing it was a source of courage. They placed it beneath pillows to aid sleep and ward of nightmares.
